Butterfly
Rosewood Hong Kong, the 2019 tower on the Kowloon waterfront, made Butterfly Patisserie and the Butterfly Room afternoon tea the reservation of the city: sculptural cakes and the harbour in the window.
The Rosewood opened in 2019 as the centrepiece of Victoria Dockside with a lobby that looks across the harbour to the Island skyline. Its pastry kitchen produces the Butterfly Room afternoon tea, a themed tier that changes several times a year and books out weeks ahead, and Butterfly Patisserie on the ground floor, a counter whose cakes are built like small sculptures and sold by the piece. The kitchen also runs seasonal collections, mooncakes and Christmas logs that have become a Hong Kong sell-out.
Butterfly is the modern answer to the Peninsula and the Mandarin: a new tower, a new pastry language, and a counter open to the waterfront promenade.
