Choose the fold, the number of folds and the butter, and the lab counts the layers of a croissant, draws them and tells you when the honeycomb collapses.

A classic croissant has three letter folds and 27 layers of butter, 55 layers in all. Change the fold to a book fold, add a turn, change the butter ratio, and the lab recalculates the layers, the thickness of each one and the verdict: chunky, classic, fine or too many.

Lamination multiplies: each letter fold triples the butter layers, each book fold quadruples them, and the dough layers are always one more than the butter layers. The lab computes both, estimates the thickness of each butter layer from the rolled height, draws the stack and gives a verdict based on what pastry chefs observe: below about 20 layers the crumb is open and rustic, 27 is the Parisian honeycomb, up to 80 is fine and crisp like a Danish, and beyond that the butter is thinner than a tenth of a millimetre and merges with the dough.
