Pastry on the Seine
Cheval Blanc Paris, opened in 2021 in the old Samaritaine on the Seine, gave Maxime Frédéric a pastry kitchen and a café, Limbar, where his cakes are sold with a view of the Pont-Neuf.
The LVMH palace on the quai du Louvre is the newest of the Paris palaces and the one with the best view: every room looks at the Seine. The pastry kitchen belongs to Maxime Frédéric, who came from the George V and built a repertoire around his family’s farm in Normandy: butter, honey, buckwheat, cream. His desserts close the menus of Arnaud Donckele’s three-star Plénitude, and his cakes are sold at Limbar, the café on the ground floor with tables on the quay.
Limbar is the key. It opens early, sells croissants and viennoiseries in the morning, cakes and tarts through the day and a small afternoon tea; the counter faces the street, so the palace is a café for anyone with an hour by the river.
