About paseria

An independent guide to the art of fine patisserie, written by people who order dessert first.

paseria is a guide to the sweetest side of luxury: the patisseries inside palace hotels, the pastry chefs whose names sell out a counter, the signature desserts that define a house, the great afternoon teas, the chocolatiers and the independent boutiques that make a city worth an extra day. We cover twelve destinations: Paris, London, Monaco, Dubai, Mallorca, Zurich, New York, Tokyo, Vienna, Munich, Hong Kong and Singapore.

How we choose

We select for craft at the counter, not for follower counts. A house enters the guide when its pastry would stand on its own without the name on the box: the lamination, the ganache, the balance of sugar and acidity, the way a tart is cut. We describe what to order, at what hour, and what it will roughly cost. Guide prices are editorial estimates in euros and change with seasons and exchange rates.

Independence

paseria is published by NexTao GmbH and is not paid by the houses it describes. Portraits of chefs and hotels are editorial texts based on public information; we do not quote people we have not spoken to. Houses may become members of the paseria network and are marked as such; membership does not change a text.

The Paseria Selection

Once a year the editors publish the Paseria Selection: the houses, chefs, desserts, tea rooms and chocolatiers we would send a friend to first. It is a recommendation, not an award, and it is revised every year.
