The Hôtel de Paris on the casino square is the sweet heart of Monaco: the dessert trolleys of the Louis XV, the Salle Empire and a pastry kitchen that has fed the principality since 1864.
Built by François Blanc beside his casino in 1864, the Hôtel de Paris is the Riviera palace: a Belle Époque façade, a lobby with a bronze horse whose knee is rubbed for luck, and Alain Ducasse’s three-star Louis XV, where the meal ends with a dessert trolley and a baba au rhum in the Riviera manner. The hotel’s pastry kitchen serves the Salle Empire, the Bar Américain and the terraces, and its afternoon pastry with a view of the casino square is a Monaco ritual.
The style is Mediterranean and classical: citrus from Menton, olive oil in the biscuits, a lemon tart that is the emblem of the coast. The hotel shares its kitchen tradition with the Hermitage next door, and both belong to the Société des Bains de Mer.
