Hidemi Sugino’s shop in Kyobashi is a small salon where the world champion of 1991 sells a limited number of mousse cakes a day, the Ambroisie above all, so delicate that the most fragile ones must be eaten at the counter.
The shop is quiet and precise: a counter of small cakes cut with a jeweller’s exactness, a salon with a few tables, a rule that the fragile pieces are eat-in only. The Ambroisie, the Automne, the Fruits Rouges and the seasonal pieces sell out by noon on weekends; the shop opens at eleven and closes when the cakes are gone.
It is the pilgrimage counter of Tokyo and the reason to plan a morning in Kyobashi.
