The parfait as sculpture
Asako Iwayanagi’s patisserie in Todoroki is the shop that made the parfait an art: seasonal glasses built in layers of fruit, ice cream, jelly and biscuit like a still life, alongside cakes and viennoiserie, in a quiet residential street.
The shop opened in 2015 far from the centre, and Tokyo travelled: the parfaits, changed with the season and built in a tall glass with a dozen elements, strawberry in spring, peach in summer, chestnut in autumn, are the reason. The counter sells cakes, tarts and croissants; the parfaits are eaten in the salon and booked days ahead.
It is the Tokyo boutique that gave the guide a new form, and the parfait is the piece.
