The champagne truffle
Teuscher’s champagne truffle, created in 1947, is the emblem of Zurich chocolate: a fresh cream centre with champagne in a dark shell, dusted with icing sugar, sold in boxes decorated with silk flowers from shops that change their windows with the season.
Dolf Teuscher started in the mountain village of Vals in 1932 and moved the confiserie to Zurich; the champagne truffle, made without preservatives and shipped to the house’s shops in New York and Tokyo with a ten-day life, is the reason for its fame. The Bahnhofstrasse and Storchengasse shops are dressed in flowers and change with the season, and the range runs to pralines, marzipan and seasonal figures.
A box of champagne truffles is the Zurich gift, carried flat and eaten within the week.
