Pierre Marcolini roasts his own cacao in Brussels and sells bonbons, hearts and single-origin bars in boutiques from the rue de Seine to Ginza, packaged like a fashion house.
The Brussels chocolatier and pastry world champion was among the first luxury houses to source and roast its own beans, and the difference is in the ganache: bright, fruit-led, low in sugar, tasting of Madagascar, Ecuador or Peru. The Paris boutique on the rue de Seine and the Tokyo salon in Ginza sell the hearts, the seasonal collections and the bars, and a small tea room in Ginza serves the chocolate desserts.
