Paul A. Young makes his chocolates by hand in the kitchens beneath his shops in Soho and the City: ganaches of Marmite, sea salt caramel and port, and a brownie that London queues for.
Young, a pastry chef under Marco Pierre White, opened his first shop in Islington in 2006 and built a reputation for flavours that are British and brave: sea salt caramel, Marmite, stout, Earl Grey, port and stilton at Christmas. Everything is made in small batches with a short shelf life; the sea salt caramel brownie is the best in the city.
The Soho shop on Wardour Street is the one to visit; the chocolates keep a week.
