Patrick Roger, Meilleur Ouvrier de France, is the chocolatier who sculpts: hippopotami, gorillas and a tonne of chocolate in the windows of his turquoise boutiques, and inside, ganaches of lime, basil and honey that are among the finest in Paris.

Roger sculpts in chocolate the way other artists sculpt in bronze, and his windows on the boulevard Saint-Germain and the place de la Madeleine are Paris sights. The chocolate itself is serious: thin-shelled bonbons with ganaches of lime and basil, honey from his own hives, caramel with salted butter, and the amandes, almonds coated in dark chocolate that are the house’s best seller.

The boutiques are turquoise, the boxes are turquoise, and the price is what a sculptor charges.
