A manufacture in the Bastille
Alain Ducasse opened a chocolate manufacture in an old garage near the Bastille in 2013, roasting and grinding beans behind glass: bean-to-bar chocolate from a three-star chef, in bars that taste of the origin.
The Manufacture on the rue de la Roquette is a workshop first: roasters, grinders and conches visible from the shop, and a range of bars from single origins at 75 percent to a milk at 45 and a bar at 100. Bonbons, pralines and hot chocolate follow, and boutiques in Paris, London and Tokyo carry the bars.
It is the place in Paris to understand what bean-to-bar means, and the bars are the thing to buy.
