Caramels and the mille-feuille to order

Jacques Genin’s salon on the rue de Turenne is the Marais address for soft caramels, fruit pâtes and bonbons, with a tea room where the mille-feuille is assembled when you order it.

Genin came to chocolate late, supplying restaurants before opening his own salon in 2008: a high room with a marble counter, a kitchen on the floor above and a tea room where a hot chocolate and a mille-feuille built to order are the ritual. His caramels, soft with salted butter, mango or passion fruit, are the best in the city; the pâtes de fruits and the bonbons follow.

The shop refuses to be a brand: no boxes in department stores, one address in the Marais and one in the 7th, and a queue on Saturdays.
