The fox and the mille-feuille
Yann Couvreur’s first shop on the avenue Parmentier is the neighbourhood boutique with a palace kitchen: a fox on the box, a mille-feuille assembled to order and a Saturday queue of the 10th and 11th arrondissements.
The shop is modern, with the kitchen visible behind glass and a small counter: the mille-feuille built when you order, the Merveille with its meringue, seasonal fruit pieces, a hazelnut cake, a Saint-Honoré, and viennoiserie in the morning. No gold leaf, no trompe-l’œil, everything built to be eaten.
The Marais and the Galeries Lafayette shops carry the same pieces; the Parmentier shop is the original.
