Yann Couvreur left the Prince de Galles palace to open his own boutique on the avenue Parmentier in 2016, where the mille-feuille is assembled in front of you and the fox is the emblem.

Couvreur ran the pastry kitchens of the Carlton Cannes, the Burgundy and the Prince de Galles before opening on the avenue Parmentier in 2016 with a counter, a kitchen behind glass and a fox on the box. His mille-feuille is built to order so the puff stays crisp; his Merveille and his seasonal fruit pieces made the boutique a quarter of an hour’s queue on weekends. Further shops followed in the Marais, at the Galeries Lafayette and abroad.

His style is generous, textural and honest: no gold leaf, no trompe-l’œil, a pastry built for eating rather than photographing. The palace training shows in the precision.

Couvreur is the palace chef who went independent and took the neighbourhood with him.
