Levantine nests in the Marais
Maison Aleph in the Marais makes small nests of kadaif pastry filled with creams of pistachio, rose, orange blossom, tahini and cardamom: the Levant in French pastry form, sold by the piece from a tiled counter.
Myriam Sabet opened the boutique in 2017 with the sweets of her Syrian childhood rebuilt with French technique: nests of shredded kadaif dough baked crisp and filled with light creams, a baklava with a French butter, an ice cream of mastic. The pieces are small, sold by the dozen, and the flavours change with the season.
It is the Paris boutique that expanded the vocabulary, and the nests travel well.
