The éclair as a collection

Christophe Adam’s L’Éclair de Génie in the Marais sells one product in twenty flavours: the éclair, with a glossy top decorated like jewellery, in a box of two or six, and it made the humble choux finger modern.

Adam, the former creative director of Fauchon, opened the first shop on the rue Pavée in 2012 with the idea of the éclair as a fashion object: salted caramel, passion fruit and raspberry, vanilla and pecan, chocolate, each with a top decorated with fruit, nuts or gold. The chain has shops across Paris and in Tokyo and Hong Kong; the rue Pavée is the original.

It is the quickest sweet stop in the Marais and the box of two is the correct order.
