The finest ensaimada
Fornet de la Soca, in an art nouveau shop on the Plaça Weyler, bakes the island’s finest ensaimada and revives the old Mallorcan recipes: cocas, panades, the sweets of the villages, from a wood-fired oven.
Tomeu Arbona, a former social worker with an obsession for old recipe books, opened the bakery in 2012 in a listed modernist shop and became the island’s baker of record: ensaimadas with a crumb finer than anywhere else, savoury cocas, the panades of Easter, the coca de patata, the crespells and the sweets of the Mallorcan calendar. The queue on the Plaça Weyler is a Palma sight.
It is the one ensaimada to carry home, and the shop packs it in the octagonal box for the plane.
