Ca’n Joan de s’Aigo in the old town of Palma has served ensaimadas, quartos and thick hot chocolate since 1700 in a room of marble tables, tiles and painted ceilings: the oldest sweet ritual of the island.
The house began as an ice seller, bringing snow from the Tramuntana, and became the chocolate house of Palma: hot chocolate thick enough to hold a spoon, ensaimadas plain or filled, the quarto, a light sponge, almond ice cream in summer. The original shop on Carrer de Can Sanç is the atmospheric one, with two more in the city.
It is where Palma takes its breakfast on Sunday and its merienda at six, and the queue is part of it.
