Tea in the Salon Proust is served under wooden panels and books, with François Perret’s madeleines arriving warm in a silver dish: the most literary afternoon in Paris.
The salon is a small library room with a fireplace and a portrait of the writer who took his madeleines a few streets away. The tea comes in stages: finger sandwiches, then the pastries of the season from Perret’s kitchen, then the madeleines, warm, in relays. No scones; this is a French tea. The tea list is the Ritz’s own blends, the service moves at the pace of the room.
Book a table by the fire in winter and ask for the marble cake even if it is not on the card; it usually is.
