Philippe Conticini invented the verrine, rebuilt the Paris-Brest with praline hearts in a crown of choux and made emotion the subject of pastry through La Pâtisserie des Rêves and his own boutiques.

Conticini is one of the great teachers of French pastry: he invented the verrine, the dessert served in a glass, in 1994, led the pastry of the Table d’Anvers and Petrossian, and co-founded La Pâtisserie des Rêves in 2009, where his Paris-Brest, eight choux in a ring with a liquid praline heart in each, became the modern reference for the classic. Since 2018 he runs his own boutiques in Paris under his name, with the Paris-Brest, the Saint-Honoré and the tarte Tatin at the centre.
His style is about texture and generosity: the crunch, the cream, the surprise of a liquid centre. He has written the reference books of his generation and trained many of its chefs.
Conticini is the classicist of this guide: the one who takes the old recipe and finds what it was always trying to be.
