Michael Bartocetti has led the pastry kitchen of the George V since 2019 with a repertoire built on vanilla, honey and fruit and very little sugar: the quiet tea of the golden triangle.

Bartocetti trained with Alain Ducasse and led the pastry kitchen of the Shangri-La Paris before taking the George V in 2019. His desserts are exercises in restraint: a vanilla dessert in several textures, a honey from the hotel’s hives, fruit at its ripest with almost no added sugar. The afternoon tea in La Galerie and the desserts of Le Cinq, L’Orangerie and Le George come from his brigade, which has trained several of the city’s younger palace pastry chefs.

He does not run a street counter and does not seek the spotlight; the work is in the room. For the visitor, the George V tea is the one for people who find most pastry too sweet.

Bartocetti is the pastry chef of the palate rather than the photograph.
