Cheryl Koh, pastry chef of Les Amis and named Asia’s best pastry chef in 2016, opened Tarte on Scotts Road and made the fruit tart Singapore’s signature pastry.

Koh trained in Paris, worked at the Ritz, Le Meurice and the George V and returned to Singapore as pastry chef of Les Amis, the city’s grand French restaurant. Named Asia’s best pastry chef in 2016, she opened Tarte by Cheryl Koh at the Shaw Centre the same year: a boutique built around one form, the tart, with a French base and fruit at Southeast Asian ripeness, mango, strawberry, passion fruit, chocolate.

Her style is exact and unfussy: a thin crisp shell, a cream that supports, fruit that is the point. The boutique is the reference in Singapore and the tart is the piece the city brings to dinner parties.

Koh is the palace-trained chef who came home and chose one thing to do perfectly.
