Coruble came to the Peninsula Paris after palace kitchens in the city and took over its pastry in the late 2010s. Her work is the themed tea: each season the Lobby tier is rebuilt around an idea, a designer, a flower, a colour, and the pieces are among the most photographed in Paris. She also runs the desserts of L’Oiseau Blanc on the roof and the Peninsula Boutique’s cakes.

Her style is decorative and precise, with a lighter sugar than the theme suggests; the classic tea is served alongside the seasonal one for those who prefer the tradition.

Coruble is one of the few women leading a Paris palace pastry kitchen, and the Peninsula tea is her showroom.
