Born in 1991 in Geneva and raised near Annecy, Guichon trained in France, worked at the Hôtel Hyatt and with Christophe Michalak, and moved to the United States, where his videos of chocolate sculptures, a carousel, a violin, an octopus, a clock that works, made him the most watched pastry chef in the world. He opened the Pastry Academy in Las Vegas in 2019 with Michel Ernots and hosts a television competition on the same craft.

His work is showpiece pastry: chocolate and sugar as structural material, tempered and assembled with an engineer’s patience. The pieces are sculptures first and desserts second, and the audience is the world.

Guichon is on this list because he changed how people see the craft: as a spectacle worth watching to the end.
